What is Maitake?

Maitake: 舞茸 (Grifola frondosa, Hen of the wood) is the Japanese name meaning for “dancing mushroom” and indigenous to the northeastern part of Japan. Maitake is an edible polypore mushroom and it has a distinctive smell & flavour. Maitake is widely eaten in Japan and its popularity in western cuisine.
